To prepare Cyril Lignac’s sugar pie, you will need:

  • 300g flour
  • 10g of sugar
  • 3 eggs
  • 150g of softened butter
  • 20ml milk
  • 2 tablespoons of sour cream
  • Vergeoise or brown sugar
  • 8 g dry baker’s yeast
  • A pinch of salt

Preparation of the sugar pie

  • It will first be necessary to prepare the dough. To do this, pour in the flour, 10g of sugar and a pinch of salt. Dig a well in the center and add the yeast. During this time, warm the milk in a saucepan and add it to the preparation when it is at the right temperature. Mix.
  • Add two eggs and mix everything together. Then add the softened butter at room temperature and mix again.
  • Using your hands, knead the dough and form a ball. When it is well kneaded, let the dough rest at 28 ° C for 2 hours.
  • Once the 2 hours have passed, roll out the dough and degas it well. Then spread it out on a 28cm circular baking sheet, about 1cm thick. Let it sit again, for 1 hour and at room temperature this time.
  • While the dough is rising, mix 1 egg and the cream in a bowl.
  • Once the dough has finished laying, make holes in it with your fingers and pour in the cream and egg mixture. This done, sprinkle the whole with the preparation of vergeoise or brown sugar. You can optionally add a few pieces of butter.
  • Bake the sugar pie in an oven at 190 ° C for 25 minutes. To know when it’s ready, nothing could be simpler: it must be golden brown and caramelized.
  • All you have to do is take it out of the oven and enjoy it!
